La Madeline Healthy Tomato Basil Soup Copy Cat

Cold weather in Dallas means one thing, warm soup, I wanted to have something semi healthy and yummy. My family loves La Madeline Tomato Basil Soup but the closest La Madeline is 20 miles away and a small container is quite expensive so I decided to get in the kitchen and try to come up with something close, and to my surprise this soup might be a little better than La Madelines, and its healthier too if you don’t add the cream. Hopefully you will like it as much as we do!

1- 28 oz can crushed or diced tomatoes

1- bunch of basil fresh or basil cubes/paste

1/2 stick of butter (optional)

1/2 c cream (optional)

Seasonings to taste

In a medium sauce pan place the can of crushed tomatoes and fresh basil, also add in butter/cream if desired. I use a hand blender once the butter melts to smooth out the lumps of the crushed tomatoes and the basil, once it’s blended I let simmer to the desired temperature probably about 20 min and then its ready!

  1. I live in Addison and our La Madeline closed recently…the nearest one is now by Preston and Forest. Their soups are delicious but also contain a lot of fat. Looks like a simple and easy-to-follow recipe!
